Ingredients:

For the Cookies:

  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1 large egg
  • 1/2 cup molasses
  • 1 teaspoon vanilla extract

For the Icing:

  • 2 cups powdered sugar
  • 2 tablespoons meringue powder
  • 3-4 tablespoons water
  • Food coloring (optional)

 

Directions:

1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

2. Sift Dry Ingredients: In a medium bowl, sift together the flour, baking powder, baking soda, salt, ginger, cinnamon, cloves, and nutmeg. Set aside.

3. Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.

4. Add Wet Ingredients: Beat in the egg, molasses, and vanilla extract until well combined.

5. Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

6. Chill the Dough: Divide the dough in half, shape each half into a disc, wrap in plastic wrap, and chill in the refrigerator for at least 1 hour.

7. Roll and Cut: On a floured surface, roll out the chilled dough to about 1/4 inch thickness. Use gingerbread-shaped cookie cutters to cut out cookies and place them on the prepared baking sheets.

8. Bake: Bake in the preheated oven for 8-10 minutes or until the edges are lightly browned. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

9. Prepare the Icing: In a medium bowl, whisk together the powdered sugar, meringue powder, and water until smooth. Adjust the consistency by adding more water if needed. If desired, add food coloring for decoration.

10. Decorate: Once the cookies are completely cooled, use a piping bag or a small spatula to decorate them with the icing. Get creative and add festive designs!

11. Let the Icing Set: Allow the icing to set before storing or serving the gingerbread cookies.
