Ingredients:

For the Quinoa Stuffing:

  • 1 bell pepper, finely chopped
  • 1 zucchini, finely diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh spinach, chopped
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika

For the Portobello Mushrooms:

  • 4 large Portobello mushrooms, stems removed
  • Olive oil for brushing
  • Balsamic glaze for drizzling (optional)
  • Fresh parsley for garnish

Directions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

  2. Prepare Quinoa Stuffing: Cook quinoa in vegetable broth according to package instructions. In a skillet, heat olive oil over medium heat. Sauté onions and garlic until fragrant. Add bell pepper, zucchini, and cherry tomatoes. Cook until vegetables are tender. Stir in cooked quinoa, chopped spinach, dried oregano, paprika, salt, and pepper. Cook for an additional 2-3 minutes until flavors meld.

  3. Prepare Portobello Mushrooms: Clean the Portobello mushrooms and remove the stems. Brush both sides of the mushrooms with olive oil and place them on the prepared baking sheet.

  4. Stuff the Mushrooms: Generously fill each Portobello cap with the quinoa stuffing, pressing down gently. Ensure an even distribution of the delicious filling.

  5. Bake to Perfection: Bake in the preheated oven for 20-25 minutes or until the mushrooms are tender and the stuffing is golden brown.
